Ron’s favorite holiday dish for real estate clients. Yams, apples & pears!

You will love this recipe! It’s easy to make. Our real estate clients say they enjoy the applause when they serve it!

This particular dish has been a family favorite for many years. You will notice the ingredients are not strictly measured. It gives way to creativity and fun in our kitchen. In other words, watch out for the other cook in the house. Julie is known to add a little more of one thing or another – sometimes something special – when I’m not looking. It always turns out great. Ingredients:

Fresh yams, Granny Smith apples, fresh pears (still crunchy), navel oranges, sliced cubes of butter, brown sugar, powdered cinnamon, chopped pecans, coconut flakes, and apple juice.

The process:

Peel yams, apples and pears. Boil yams until you can press a fork into them, but not till they are mushy. Slice yams to about 1/4″ thickness. You want round slices, not long slices. Thinly slice apples and pears.

Layer the sliced ingredients; yams on the bottom, then apples, then pears. Add butter, brown sugar, cinnamon, orange slices and pecans – as much as you like. Definitely more than the Grinch would. This completes the first layer. Do it again for as many layers your baking pan can manage. Add 1/2″ cup of apple juice (more for a big pan), sprinkle coconut flakes over the top layer.

Bake at 350 degrees for 45-60 minutes. Eat, grin, and enjoy the applause!
